Chewy Fig Muesli Bars
I grew up eating Uncle Tobys Muesli bars on special occasions. With four siblings those standard boxes and even family-size boxes never went far - you had to get in quickly if you wanted one, let alone seconds!
With the addition of dark chocolate drizzled on this muesli bar slice, think of this as a grown-up and healthy alternative. You’ll still have to get your elbows out and get in quickly if you want seconds. A word of warning - it’s pretty moorish!
The chewiness of the figs with the subtle coconut flavour makes this slice the perfect accompaniment to a cup of tea or to grab as you run out the door in a rush or as a lunchbox filler!

Ingredients:
2 cups desiccated coconut
1 cups figs, chopped
2 tablespoons chia seeds
1 tablespoon tahini
1 tablespoon honey
1 tsp cinnamon powder
1/2 cup oats
Optional - 40 grams of 85% organic dark chocolate, melted
Method:
Preheat oven to 190 degrees
Blend all ingredients (minus figs) in a high speed blender for 15-20 seconds
Put all ingredients and figs in a bowl and gently mix until combined
Press ingredients into a slice tray that’s lined with baking paper
Bake for 20 mins
Take out of oven and leave to cool on a wire rack for 10 minutes
Optional - drizzle melted chocolate on to the slice
Slice up and serve
