Eating the recommended intake of 5-6 serves of veggies a day can be hard, right? Even for me - I often have to make a conscious effort to more eat veggies in the first part of the day rather than just lunch and dinner.

I’m a spud lover - always have been and always will be but sometimes it’s good to have variety and lower carb options. One of my favourite ways to do that is cauliflower mash - it tastes as comforting as potato mash but is much lighter. The other popular mash varieties in our house are green pea mash and broccoli mash!

Cauliflower is a cruciferous veggie, which means it plays a key role in supporting liver detoxification, removal of wastes and is hormone balancing!

Here’s a quick and delish cauliflower mash (that’s low in carbs and high in flavour)

Serves 6-8

Prep time: 5 minutes

Cooking time: 15 minutes

Ingredients:

  • 1 whole cauliflower, stem removed and broken into small florets

  • 50 mL olive oil

  • 2 garlic cloves, skin removed

  • optional but recommended - 30 grams butter (if you want a dairy-free option omit the butter and add an additional 30 mL olive oil)

To serve: glug of olive oil, salt and pepper

Ingredients:

  1. Steam the cauliflower and garlic in a saucepan of water until soft (approximately 10 mins)

  2. Drain and put cauliflower, garlic, oil and butter in a high speed blender

  3. Blend until smooth (I find it takes about 30 seconds or so)

  4. Serve with a drizzle of olive oil, salt and pepper
