Christmas Recipes

 

‘Tis the season for festivities AND nourishment. It doesn’t need to be one or the other! Healthy foods can and should be fun this time of year!

Here’s two of my favourite healthy snacks and desserts - mini plum puddings and christmas gelatin jelly.

Mini Plum Puddings

Ingredients:

  • 12 Bliss Balls (3 bliss ball recipes here or buy good quality pre-made and ones)

  • 50 grams of melted dark chocolate (I used 85% dark Lindt chocolate)

  • 50 grams of melted white chocolate (I used Pana Organic white chocolate)

  • 1/4 cup of goji berries or dried cranberries

Method:

  1. Put baking paper on a baking tray

  2. Roll your bliss balls in melted dark chocolate and put them spaced out on the baking tray

  3. Pop into the fridge to set for 15 minutes

  4. Add a small dollop of white chocolate on top of each ball and sprinkle on a few goji berries or cranberries

  5. Pop back in the fridge for a final time for 15 minutes or until set

Christmas Tree Jelly

Ingredients:

  • 1 cup good quality apple juice

  • 1/2 cup water

  • 4 tablespoons gelatin (from grass-fed animals)

  • 1/4 teaspoon cinnamon powder

    Method:
    1. Get a large flat baking tray (line it with baking paper) or a large glass dish and grease it with olive oil.
    2. ‘Bloom' the gelatin, which means we need to hydrate it. Stir gelatin with cold water and leave it to sit for a few minutes. It will expand and become quite thick (this is good!)
    3. Whisk apple juice and cinnamon together then add to a saucepan and put on low heat. Keep it on a low heat until it’s nearly boiling then take it off the stove.
    4. Add in the bloomed gelatin mixture to the saucepan and whisk until it's combined
    5. Pour into your tray/dish mould
    6. Leave it set in the fridge for half an hour (if that!)
    7. Using cookie cutters make Christmas shapes (or slice up the jelly into bite size pieces). Store in an airtight container and it will last for up to 1 week
