Minty Coconut Rough

3-Ingredients and 3-minutes is all you need to make this decadent and naturally, healthy dessert. It looks pretty amazing when you serve it up on a tray with some strawberries.

A few nutritional facts to convince you why you need to eat this!

  • Dark Chocolate is high in magnesium = ‘Nature’s Tranquilliser’. Helps calm the stress response, aids sleep and balances hormones

  • Coconut flakes are high fibre, which means it sweeps through the gut and helps eliminate toxins/wastes, including excess oestrogen

  • doTERRA Peppermint Essential Oil = Digestion HERO. Yup, peppermint essential oil is a gentle digestive tonic. Remember, 1 drop Peppermint essential oil = 28 cups of peppermint tea, so don’t be too heavy handed when you’re adding him in!

Ingredients:

200 grams dark chocolate (I used Green & Blacks 70% organic dark chocolate), melted

1/2 cup coconut flakes

5 drops doTERRA Peppermint essential oil

Method:

  1. Add all ingredients in a bowl

  2. Stir until combined

  3. Pour in to silicon moulds and allow it to set in the freezer for 10 minutes.

NB: If you don’t have moulds, you can pour it in to a baking tray lined with baking paper, and create more of a coconut rough bark. Whatever works for you!

  4. Enjoy and try not to eat them all at once!
