Parsley and Pistachio Pesto

Parsley and pistachio pesto - the perfect thing to throw together when it’s grocery shopping day and there’s nothing in the fridge (like seriously nothing!). All you need is an overgrown herb patch (or a neighbours) and you’re good to go. This pesto is naturally high in herbs that detoxify heavy metals including fluoride, mercury and aluminum.

This pesto worked out to be so refreshing and zesty - it’s perfect with eggs or BBQ salmon or steak, or simply drizzled on some rice or pasta for any easy dinner option that you know the kids/hubby will eat!

Ingredients:

  • 100 grams parsley

  • 2-3 garlic cloves

  • 50 grams pistachio nuts

  • 1 lemon, juice only

  • 100mL olive oil

  • optional - 3 anchovy fillets in oil, drained OR 1/2 tsp Himalayan salt

Method:

Put all ingredients in a high speed food processor and blitz until smooth

Enjoy pesto with eggs, salad, any protein of choice or on sourdough!
