Lemon Curd Bliss Balls

 

Lemon curd is one of my all time fave desserts, and these bliss balls have that same tarty buttery lemon flavour, that will curb your sweet tooth and leave you satiated, all at the same time!

Like the other bliss ball recipes I’ve shared, these ones contain three macronutrients to keep you satiated between snacks/meals, regulate blood sugar levels, support muscular health + recovery, support healthy metabolism and promote a thriving gut microbiome, including:

  1. Carbs - fibre, which includes oats (which ‘feeds’ your microbes and supports a healthy gut microbiome) and maple syrup

  2. Protein - nut butter & collagen powder

  3. Fat - coconut flakes and ghee

Ingredients:

  • 2 cups oats

  • 2 cups coconut flakes

  • 2 tablespoons almond butter/cashew butter

  • 1.5 tablespoon macadamia nut oil

  • 1 tablespoon ghee/butter

  • 3 tablespoons maple syrup

  • 1 tsp lemon zest

  • 2 tablespoons lemon juice (if you like a more zesty lemon flavour, then add an extra tablespoon of juice)

  • 1 teaspoon vanilla bean paste

  • Pinch salt

  • Optional - 2 tablespoons collagen powder

For a dairy-free version, replace the ghee/butter with coconut oil

Method:

  1. Put all ingredients in a blender and blitz until smooth

  2. Roll into bite-size balls

  3. Place in the fridge for them to ‘set’ for at least 10 minutes

  4. Enjoy!
